
Baked Winter Squash and Apple from A Family Feast
Squash comes in so many varieties today. New recipes abound. My nephew, Bob, brought a casserole to the farm, that he’d made from some of his garden produce. The name of the dish is lengthy, but descriptive: Baked Winter Squash and Apple Casserole with Crispy Topping. (The crunch comes from the pecans and Rice Krispies in the topping, along with cranberries, butter and brown sugar.)
A Christmas Side Dish
It works with butternut squash or any winter squash, such as Hubbard, buttercup or acorn. Bob upped the pecans and cranberries slightly and subbed a different apple variety. Other than that, he followed the instructions.
