German Deli Potato Salad

This recipe is from the German owner of a New York deli. Simple and delicious. The owner served it with or without mayonnaise.

  • 3 strips bacon
  • 1/3 cup onion chopped
  • 1/3 cup carrots finely shredded
  • 4 cups potatoes peeled, and sliced 1/4-inch thick
  • 1/4 tsp. salt
  • 1/2 tsp. sugar
  • 2 Tbs. vinegar
  • 1/2 cup real mayonnaise optional


  • Cook bacon until crisp; remove from skillet and reserve 2 teaspoons of drippings. Add onions and carrots; cook for 5 minutes or until tender, stirring often.

  • Boil potatoes in salted water for 5 to 8 minutes or until tender. Drain. Toss warm potatoes with vegetable-dripping mixture; add crumbled bacon.

  • Dissolve salt and sugar in vinegar. pour over potatoes and marinate for 1 to 2 hours before serving. Sprinkle with chopped green onion tops or parsley.
