
This Chocolate Chip Angel Food Cake is simple enough for even the youngest of cooks.
So what cake is the least unhealthy? That would be angel food cake with its dozen egg whites and absence of butter. Flourless Chocolate Cake also ranks high as does Strawberry Shortcake. But because of their high fat/sugar content such old favorites as carrot cake, cheesecake, and Red Velvet Cake didn’t make the cut. (Pun intended.)

Sweet Memories
My friend, Tracy, brought an angel food cake to a small outdoor gathering recently. She explained that it was an old recipe she had tucked away with the intention of baking some day. Rather than let it languish in her recipe file, she decided to give it a try. (We all have such recipes growing yellow with age in a file or kitchen drawer, waiting to be re-discovered.)
The angel food cake was further punched up with chocolate chips and a thin chocolate icing. (And, as we all know, a bit of chocolate from time to time is good for us, right?)
Box or Scratch
There are a number of angel food cake recipes on the Internet from Betty Crocker to Rachel Ray. If you prefer to make your cake from scratch, The Pioneer Woman has a great photo recipe. With a cake mix you can make it with just three ingredients.
Tracy’s version was the real deal. It took 12 egg whites—no yolk! (Sorry for pun-ishing you with another bad pun.)
Whichever one you make, you’ll want to use an angel food cake or tube pan. But don’t grease that pan! And don’t use parchment paper. It stops the egg whites from crawling up the edge and giving you a lofty angel food cake.
We ate the cake with a side of watermelon granita, an icy concoction that Robin served. Perfect for a warm day.
Just Three Ingredients!

Further adding to its appeal, this granita has just a trio of ingredients (watermelon, sugar and lime) and takes about 5 minutes of hands on prep. It reminded me of a watermelon slushie, sorbet, or melted down Popsicle.
Serve it in a tall glass with a slice of lime on the rim or in a pretty compote. Even more interest can be added with a splash of vodka.
Watermelon Granita
- 1/2 medium, seedless watermelon
- Dash of fresh lime juice
- Sweeten a bit with sugar, sweetener, maple syrup, or honey
In a blender, puree watermelon into a thin liquid, add sugar. lime and honey. Pour mixture into a wide baking dish and place in freezer, stirring occasional to prevent from freezing solid.
