Candy Peppermint Kiss Cookies

Ingredients

  • 1 cup butter barely softened
  • 1 tsp peppermint extract
  • 10 peppermint candies starlight mints
  • 2 cups flour
  • 1/2 cup sugar
  • 1/4 tsp salt
  • 1/2 cup sugar for rolling
  • 1 pkg. Candy Cane Hershey kisses

Instructions

  • Place the peppermint candies in a ziplock bag and pound them with a mallet or rolling pin till they are finely crushed, set aside.
  • Cream together the butter and peppermint extract. Beat in the crushed peppermint candies.
  • Whisk together the flour, sugar, and salt, then stir into the butter mixture. Dough will be very stiff, you may need to work it with your hands.
  • Cover and chill the dough for 30-60 minutes. Roll in 1” balls, then roll in sugar. Place on parchment lined or ungreased baking sheets.
  • Bake at 350° for about 10-12 minutes. Immediately press a kiss in the middle of each cookie.
  • Cool for several minutes on the pan before carefully removing to cooling racks, or let cool completely on the cookie sheet.
  • You should end up with about 5 tablespoons of crushed peppermint candy crumbs. You can substitute crushed peppermint candy canes.

The Family Christmas Cookie Bake

Lisa and Harper bake and decorate the traditional sugar cookies made with a press.

The day did not start well. I woke up to maintenance men digging up the street to repair a broken water main in front of my condo. With the likelihood of no water for the rest of the day, I was glad I was going to Tom and Lisa’s to bake Christmas cookies.

The Assembly Line

Before 10 o’clock, I was in the midst of the Great Cookie Bake going on in Lisa’s kitchen. There was a lot in progress. I’m always amazed at the ease with which Lisa moves from one task to the other as she cooks. She makes baking look simple, even when her kitchen is filled with spectators, kids and “helpers.”

Below is a photo shoot of the time we spent in the kitchen this weekend. I felt like an elf in Santa’s workshop. 

Before I left, I loaded up with bottles of water to take home and forgot to bring back any cookies!! When I got back to my condo the water maintenance crew was just finishing up. I jettisoned my carry-in water and went to turning on spigots to get the air out of the line.

All is well.

The Great Cookie Bake

Lisa uses a recipe that came with the cookie press many years ago. It’s the best sugar cookie I’ve had in a long time.

Once you get the hang of it, these Christmas tree cookies are easily shaped.

Harper adds the sprinkles.

I use the hot pads that Coco made for her mother to handle the first batch out of the oven.

Cookie decorating takes a good eye. These were made with cream cheese and cocoa.
