Eating raw from the sea has a primal freshness about it. There’s nothing better than sushi prepared by a master Japanese chef. That’s where Noboru Kidera comes in with his more than 20 years at creating super sushi and other Asian delicacies at Nobu’s Japanese Restaurant on Olive in U City.
Recently, along with a few family members, I sat at the sushi bar for dinner and watched Noboru work his magic on an array of fresh fish and vegetables spread before him. Working like a precision craftsman, he carefully chopped, spread, and rolled ingredient into stunning works of art.

Chef Noboru enhances his creations by selecting only the finest fish, some of which is flown in directly from Japan. He takes pride in serving only fresh fish, never frozen fillets. The many plaques on the wall attest to his skill in working with the carefully selected seafood to create award-winning sushi.
Watching him interact with the ingredients and manipulate the knives was like being on the front row viewing a well choreographed dancer. Every movement counted and was integral to the splendid outcome.
For the most authentic dining experience, pass up a table and sit at the bar where you can watch an incredible show of ancient artistry.
