Jam Cake
This old-fashion cake has been a Southern favorite for a century or more. One of my favorites.
Ingredients
- 1 cup butter
- 2 cups sugar
- 1 tsp. baking soda
- 1 cup buttermilk
- 4 egg yolks
- 3 cups flour sifted
- 2 tsp. cinnamon
- 1 tsp. nutmeg
- 1 tsp cloves
- 1 tsp allspice
- 1 tsp vanilla
- 1 cup blackberry jam seedless
- 4 egg whites beaten stiff
- Jam melted, or Caramel Icing
- Caramel Icing:
- 2 cups sugar
- 1 cup water
- 2 Tbs. vanilla
- 2 Tbs. white Karo syrup
- 1 cup butter
- 1 cup flour
- Cream butter and flour and set aside. Boil all other ingredients as for icing till mixture begins to thread, then pour slowly over flour/sugar mixture, while beating. When spreading consistency, ice cake. If icing is too thick add boiling water.
Instructions
- Cream the butter and sugar together well. Dissolve soda in buttermilk and add egg yolks.
- Sift flour and dry ingredients and alternate soda mixture and flour mixture to creamed ingredients.
- When mixed well, add vanilla and and 1 cup jam.
- Fold in egg whites.
- Bake in a greased tube pan at 300 degrees for 15 minutes; 350 degrees for 15 minutes, then 360 degrees for 35 minutes.
- Drizzle with melted jam, if desired, or better yet, use caramel icing.
