Ina Garten (a.k.a The Barefoot Contessa) does a version of Butternut Squash Salad with Warm Cider Vinaigrette that got more than 200 five-star reviews. Pretty impressive. Having pre-cut the ingredients, she completes the salad in three minutes in this video. But it takes 20 minutes in real time, not counting the roasting of the squash.
As you’ve noticed from my posts, I’ve been trying to include more butternut squash in my life. My biggest deterrent is peeling and cutting up the overly firm vegetable. I use butternut squash more often if I purchase it pre-cut. It’s a failure of patience on my part.
This salad is a breeze to put together, though next time I would make one small adjustment to the recipe. I wouldn’t roast the cranberries; I thought it made them too chewy. I also lined the sheet pan with parchment paper to help with the clean up.
