
Cranberry White Chocolate Cake
Here’s a cake that’s got Christmas written all over it. Laura, my neighbor at the farm, brought me a slice of this cake, that she tried out on her family in advance of the holidays. Believe me, it was a temptation not to dive right into it. But being a food blogger, I knew my first duty was to photograph this splendid holiday dessert. By the time I was finished getting shots from all angles, there were several fork-wielding cake testers in the kitchen ready to sample the snowy cake with the sparkling cranberries. All gave it a hearty thumbs up.
This lightly dense cake slaked in white chocolate is offset by the slight tartness of its cranberry speckled layers. The recipe cautioned not to over mix the batter. Stir only until it’s smooth.
The cranberries go into a simple syrup mix overnight, so they get sticky enough to hold the sugar glaze. It’s good to know how to make this garnish, since it’s one that would add a decorative touch to any holiday dessert. The remainder of the recipe takes a few hours to assemble, but the results are stunning.
