Split Pea Soup with Ham
This split pea soup has a few more ingredients than some, but I love the mingled flavors. Serve it chunky or use a stick blender for a smooth soup.
Ingredients
- 2 Tbs. butter
- 1/2 onion diced (I use a whole small onion)
- 2 ribs celery diced
- 2 carrots diced
- 1 medium potato optional
- 1 cloves garlic minced
- 1 pound ham diced (I also throw in a ham hock for more flavor)
- 1 bay leaf
- 1 pound dried split peas
- 1 qt. chicken stock
- 2 1/2 cups water
- salt and ground black pepper to taste
Instructions
- Place butter in large soup pot over medium-low heat. Stir in onions, celery, carrots,potato (if using) and garlic. Cook slowly until onions are translucent, but not brown, about 5-8 minutes.
- Add diced ham (and ham hock, if using), bay leaf, and split peas. Pour in chicken stock and water. Stir to combine. Simmer slowly until pears are tender and soup is thick, about 1 hour 15 minutes. Stir occasionally. Season with salt and pepper to serve. (I season partially while cooking. Then before serving, I taste, and season again as needed.)
