Mixed Green Salad with Quinoa
This is such a pretty and nutritious salad. that works as a dish for a family meal or special occasion.
Ingredients
- 3 cups chopped mixed salad greens
- 1 cup quinoa cooked
- 1 can chickpeas rinsed
- 1/2 cup shredded carrot
- 1 can chickpeas drained and roasted.
- 1/2 cup cherry tomatoes halved
- 1/2 cup cucumber julienned
- 1/4 cup feta cheese
- 2 Tbs. pickled red onions
- Apple Cider Vinaigrette
- 1/4 cup apple cider vinegar
- 1/3 cup olive oil
- 1 Tbs. honey
- 1 Tbs. Dijon mustard
- Salt and pepper
- 1 minced garlic clove
Instructions
- Combine all vinaigrette ingredients and shake well in small glass jar. Combine all salad ingredients and dress with vinaigrette.
