Easter Mini Cheese Cakes
These mini cheese cakes feel like spring and look like little Easter baskets. You won't believe how easy they are to make.
Ingredients
- 12 vanilla wafers
- 2 8- oz. pkgs. cream cheese softened
- 1/2 cup sugar
- 1 tsp. vanilla
- 2 eggs
- Topping
- Mix a cup of coconut with 12 drops of green food coloring in a zip lock bag.
- Place one tablespoon of coconut in the center of each mini cheesecake creating a nest and place a candy egg or two of your choice in the center.
Instructions
- Line muffin tin with foil liners. Place on vanilla wafer in each liner. Mix cream cheese, vanilla and sugar on medium speed until well blended. Add eggs. Mix well, Pour over wafers, filling 3/4s full. Bake 25 minutes at 325 degrees. Remove from pan when cool. Chill. Add topping.
