La Scala Chopped Salad
This is the original La Scala Chopped Salad, created in the 50s by Chef Jean Leon of Beverly Hills
Ingredients
- 2 heads of lettuce finely chopped, romaine and iceberg
- ¼ lb. salami julienne
- ¼ lb. Mozzarella shredded
- 1-15- oz. can garbanzo beans drained
- Dressing:
- ¼ cup oil
- 2 Tbs. wine vinegar
- 1 clove garlic pressed
- 1 tsp. dry mustard
- ½ tsp. salt
- ½ tsp. fresh ground pepper
- ¼ cup grated Parmesan
Instructions
- Chop all ingredients, but leave garbanzos whole. (Romaine lettuce gives flavor while iceberg imparts crunch.) Toss all together and dress with vinaigrette. Serves 6
- If you’re into yummy, yellow vegetables, this is a healthy, happy dish with lots of taste and eye appeal.
