Chili
A hearty bowl of chili for a cold winter day
Servings 8 -10
Ingredients
- 2 Tbs. oil
- 1 large onion chopped
- 3 garlic cloves crushed
- 2 lbs. coarsely ground beef 85% lean
- 2 16- oz. cans whole tomatoes undrained, chopped
- 1 16- oz. can pinto beans drained and rinsed
- 1 6- oz. can tomato paste
- 2 Tbs. good quality chili powder
- 1/2 tsp. vinegar
- 3/4 tsp. sugar
- 1 tsp. salt
- 1/2 tsp. ground cumin
- 2 whole cloves
- 1 small bay leaf
- 1/8 tsp. ground red pepper if desired
Instructions
- Warm oil in large pot over medium heat. Sauté onion and garlic until lightly brown. Add ground beef and cook until browned. Drain off excess fat.
- Add remaining ingredients. Simmer uncovered for an hour. Remove bay leaf and cloves. Top with grated yellow cheese and chopped green onions, if desired. Serves 8-10.
