Cyndy and I were on the phone recently, lamenting the tendency to overeat during a lock down. I agreed. “I’m thinking when this is all over, we’ll waddle from our bunkers ten pounds heavier.”

Spaghetti Squash
The experts tell us that while we’re hunkered down in our homes, we shouldn’t over do it on the junk food. So I was pleased to hear from Martha and Paul, my neighbors, who were trying to cook healthy meals. They found that spaghetti squash was a quick and easy to make in their Instant Pot and sent me the recipe.
You simply stab the squash 10 times with a sharp knife to pierce the skin. Put it in the pot with the trivet, 1 cup water, and set the timer for 7 minutes. Natural release, and let squash cool a bit before scooping out the seeds and shredding the insides with a fork.

More Pastimes
There are other pastimes to take our minds off of food and incarceration. Look for something familiar to do even if it’s no more than re-reading a favorite book or listening to old music or talking with an old friend. I hate to admit it, but I’ve watched several reruns of the Golden Girls, All in the Family, and The Simpsons. I sang along with Elvis while listening to a continuous loop of his old recordings. I find amusement where I can.
Thought from my Kitchen Window
Looking out my kitchen window one rainy morning (I forget which day of the week it was. Does it matter?) and saw a pair of Canadian geese enjoying a swim on the pond. They spent most of the morning and provided me some grand entertainment.
I was surprised to see that they didn’t both eat at the same time. One would “stand guard,” totally immobile, while the other foraged for food without fear, because his pal was on the lookout.
Be like the Canadian geese, watch out for each other.
