
Getting in the spirit of the Mexican festivity was reason to bring out all the colorful tourist sombreros collected in Mexico.
With both Derby Day and Cinco de Mayo falling on the same weekend, we have a lot to celebrate. The Kentucky Derby takes 2 minutes to run, hardly enough time to down a mint julep. But Cinco de Mayo offers fun foods and festivities galore. Being Americans, we enjoy celebrating each other’s holidays. I like having an excuse to eat tacos on a day other than Taco Tuesday.
The Cake for Milk Lovers
Tom, Lisa and the girls invited me to take part in making a Tres Leches Cake, the yummy South of the Border delicacy that boasts three different milks. Since the girls provided plenty of help, I just watched the mixing and baking. I also gave advice and helped lick the spoons afterwards. But mostly I just laughed at the antics of my fun-loving family, as you can see in the photos below.

Addie is a serious baker, as seen when she adds the eggs ever so carefully.

After the milks are poured over the cooled cake, it’s time for the icing.

The cake is made in three layers: cake, filling. and topping. Contrary to its name, this recipe calls for four rather than three forms of milk in the filling and topping: condensed milk, evaporated milk, whole milk, and heavy cream.

While the cake baked, Lisa arranged flowers. Ahh. . . fresh flowers and freshly baked cake. Perfect!
