Do you ever open your frig and wonder how to squeeze a quick, but tasty meal out of what’s there? If so, this recipe is for you. David Tanis of the the New York Times recently served up this cool weather dish based on three ingredients—sausage, apples and onions—cooked separately and then combined.

True, this recipe has a few funky spices, but I put in just those I had—the bay leaf and cloves. I don’t cook with allspice berries and seldom with ground allspice. So I just left those out. But if you want the cinnamon/nutmeg-like flavor just sub 1/8 teaspoon of ground allspice for 3 berries.
I have since found a similar recipe that ups the apple flavor by using apple cider vinegar.

First, season a sliced onion and saute in butter or, even better, bacon drippings. If you want to take time to caramelize the onions, all the better.

Remove onions from the skillet after about 10 minutes and place in oven-proof bowl. Cook the sliced apples in the same skillet until brownish, about 5 minutes. (I leave the skins on.) Remove the apples and place them atop the onions. Pop in a slightly warm oven to maintain heat while cooking sausage.

Next, give the sausage its turn in the skillet. (I cut the links into chunks). When brown, take the onion and apple combo from the warming oven and top with the cooked sausages. Sprinkle with parsley, if you like. That’s it!
