The most recent recipe was from the kitchen of John Beakley of Jefferson City, who has taken to testing various muffins. You might call him the Chuck Berry of homemade muffins for these are definitely “Johnny B. Good” muffins. The recipe comes from the website of the Brown-eyed Baker and is made with pumpkin. But it’s not just an ordinary pumpkin pastry; there’s a surprise hidden on the inside. When you bite into one of these warm, crunchy-topped treats a small bit of soft, cream cheese floats onto the palate.
The cream cheese and the pumpkin are a great pairing and make for a perfect holiday treat. What’s more, John says they’re easy to make.
