Fig and Arugula Salad
A great way to use fresh figs in this salad that maintains the simplicity of the fruit.
Recipe type: Salad
- 4 cups arugula
- 8 fresh figs, quartered
- ¼ cup feta cheese
- ¼ cup Marcona almonds
- 1 Tbs. honey, or to taste
- 2 Tbs. balsamic vinegar
- Gently toss arugula, figs, cheese, and almonds together in a large bowl.
- Place the honey and balsamic vinegar in small bowl and whisk.
- Add salt and pepper to taste.
- Dress salad just before serving. Serves 4.
